This PNG Elimbari is a real treasure of a coffee experience, not only for its interesting origin story, but also for its fantastic flavour. We’re talking sweet, fruity and chocolatey, with a deep, rounded profile that leaves you wanting more.

About this coffee
Coffee in Papua New Guinea is largely grown by small holder farmers in ‘gardens’ – a small plot of land that contains everything from a few trees up to a three-hectare plot at most. Elimbari is a blend of three arabica varietal plants native to the island; Arusha - native only to PNG and Tanzania, Bourbon and Typica - a plant descendant from the infamous Jamaica Blue Mountain.

Once picked, coffee is pulped, and dry fermented for 24 hours before being washed and dried on sails – stretched tarpaulin drying beds. From there the farmers travel by foot, often carrying 

their harvested cherries over mountains, rivers, valleys, and through tropical forests to sell them at the local Kongo sorting mill where it’s sorted for production and export.

Origin
Papua New Guinea is an island state off the coast of northeastern Australia. It shares its island with the Indonesian provinces of Papua and West Papua (also known as Irian Jaya). Still relatively new as a coffee growing origin, with commercial coffee production spanning back to only the last 100 years. Initially with teething issues on the production front, but with some serious focus from speciality producers, the coffee now being yielded in Papua New Guinea is producing some fantastic results.

Aeropress (Inverted method): 15g coffee, 1 min 100ml bloom, 150ml, plunge slowly @ 3 mins for 30 seconds.
