As this expansion occurs, the 'pores' of the bean begin to open, allowing the caffeine to be released into the water. As this happens a cycle occurs releasing the caffeine-extracted water from the tank, replacing it slowly with fresh water in a continuous cycle until all of the caffeine has been released. The beans are cooled slowly again using fresh water, before being drained and dried back  to it's original state again.
