Volumes are higher, but attention to detail remains—producing some of Yemen’s most consistent and exciting coffees.\u003cbr\u003e\u003cbr\u003e\u003cbr\u003e\n\u003cstrong\u003e\u003cbr\u003e\nThe CO2 Decaffeination Process:\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003e\u003cbr\u003e\nAlso known as the \u003cstrong\u003esupercritical fluid extraction \u003c\/strong\u003emethod the CO2 Decaffeination process uses carbon dioxide as a solvent to remove caffeine from coffee beans while preserving most of the flavour compounds. The coffee is added to a pressurised extraction vessel where the CO2 becomes a solvent for releasing the caffeine. A process loop occurs to remove the caffeine until less than 0.01% caffeine remains, at which point the coffee is removed from the vessel and drained. As this expansion occurs, the 'pores' of the bean begin to open, allowing the caffeine to be released into the water. As this happens a cycle occurs releasing the caffeine-extracted water from the tank, replacing it slowly with fresh water in a continuous cycle until all of the caffeine has been released. The beans are cooled slowly again using fresh water, before being drained and dried back  to it's original state again.
